Would you carry out the extraction of the pigments(plant) at high temperatures? why? or why not?

At high temperatures you may "cook" the pigments and cause them to decompose. However at high temperatures the rate of extraction will be higher.
At low temperatures there is much less chance of damaging the pigments but extraction will be slow.
Probably best at lower temperatures, but high enough for a reason rate
