Anthocyanins are the pigments that reflect red, blue, purple, or magenta colors. They are not involved in photosynthesis and are not even produced in leaves except briefly in early spring when the new growth appears flushed bronze or red, then again in fall to protect against UV damage. Anthocyanins appear most commonly to provide color to flowers and fruits.
Recent literature reports some 550 anthocyanins.
